Breakfast: muesli with yoghurt and strawberries

It is about time: breakfast. You can’t always just eat bread and rolls for breakfast, can you? That’s why we have an alternative for you with muesli. We love it especially in summer when it’s hot because of the refreshing yoghurt and the strawberries which are best in summer. When it’s hot I don’t need a lot of food but this is great.

I made 2 versions as you will see, one for Lars and one for me. He prefers pure oats and I prefer muesli. If you fill it in a weck-glass, or at least one that is nicely sealed, you can take it to work or uni or whatever. It gives you quite a lot of energy and you are very well-fed afterwards.

You can combine whatever you like, of course, if you have mango at home or bananas that is fine, too. Here it’s just strawberry time and I love them so much. There is nothing better than strawberries to me. So, here you get the recipe.

Ingredients

Vanilla-yoghurt:

      • 500g yoghurt
      • 1/2 vanilla
      • 1-2 tsp honey

strawberry mousse:

      • one huge hand full of strawberries
      • maybe some honey or orange juice

Version 1:(Small jar)

      • 3-4 tbsp oats
      • 1 tsp goji berries, dried
      • 1-2 tsp coconut flakes
      • ca 150g selfmade vanilla yoghurt (on top)
      • 5-6 EL strawberry mousse

Version 2:(bigger jar)

      • 3-4 tbsp muesli with raisins of you like 😉
      • 1 tsp goji berries, dried
      • 1-2 tbsp sunflower seeds
      • 1-2 tsp coconut flakes
      • ca 220g yoghurt (plain or vanilla)
      • 7-8 tbsp strawberry mousse

Preparation

  1. First, prepare the yoghurt, so that it can rest. Simply add the honey and the pulp of half a vanilla. Stir it and that's it.
  2. Cut off the green part of the strawberry and puree it. The longer the processor works, the finer the puree gets. I like it really fine in this muesli but you can decide for your own. If you like you can add some vanilla, honey or orange juice.
  3. Now fill the jars with the muesli or oats, berries and coconut flakes (for version 2 the sunflower seeds as well), then add the yoghurt but be careful, you want it to look nice, right?
  4. Last step is to top it with the puree, close the jar and put it in the fridge. The muesli becomes really soft if you prepare it the night before, I really love that but you can prepare it just before you leave as well.
