Salad is one of those dishes that can’t be more boring, do you agree? Well, very often that is exactly the case but there are exceptions to everything, right? But salad is low carb (without croutons) and healthy (without mayonnaise) and if you use the right dressing it can be really delicious, too. Ok, in summer, everything healthy tastes so much better but we can work our magic in winter as well, right? Do you know what we have to think of when we hear layer-salad? Mrs Eriksens 7-layer-salad from How I Met Your Mother. Great thing, though I doubt that anyone would be able to eat that monstrous thing. It is way too crazy what ingredients are placed in that “salad” even though it is hard to call it salad. But I guess it might be a family recipe and it is quite funny.
This salad in a jar to go is very nice, easily prepared and perfect for long work days or uni days. If you like, take the dressing in a separate jar or mix it together before you leave home. Doesn’t really matter. Just add the dressing, shake it very well and eat all of it if you like because it is low carb 😉 so no problem here.
- 120g chick peas
- 5-7 slices of cucumber
- 1/4 avocado
- 1/2 chicken breast
- 6-8 raspberries
- 2 tbsp yoghurt
- salt, pepper, paprika
- 1 pinch of sugar
- some olive oil
- Season the chicken with salt, pepper and paprika before frying it in a pan from both sides until it is well done. While it cools down, wash the chick peas and put them in the jar.
- Cut the chicken in slices and let it cool down a bit longer because otherwise the salad will not be as fresh as it should.
- Cut the avocado and cucumber, wash the salad and add it to the jar. Then add the chicken, cucumber and avocado.
- Get a high vessel and put in the yoghurt, raspberries, salt, pepper and a bit olive oil. Blend it and taste it in case you have to season it again.
