#fitfood: Lentil salad with pomegranate seeds and honey goat cheese

So, finally we show you the recipe that accompanies us since we started loosing weight: lentil salad. It is a perfect protein source, since it consists of 24% proteins and contain some complex carbs which are good carbs. They keep you filled for a long while and don’t cause a rapid increase of your blood glucose level. This is a perfect combination because they also support muscle building.

We often ate the salad when we needed power for sports or as a snack at work. Some days we try not to eat any carbs but every once in a while your body needs some. You can find these complex carbs in many vegetables and whole grain products. So if you need some energy, go get some complex carbs.

What is your biggest problem while loosing weight? Is there something you can’t live without or at least hardly? I have a problem with not eating bread. Well ok, bread aint the real problem, there is whole grain bread, sure, but the sausage I would top it with wouldn’t help me losing weight. But that is why I am always excited for the weekends. I always eat bread at weekends. My second issue is chocolate and I am pretty sure that I am not alone here. When I start I hardly know any limit. I could easily eat 2 or 3 whole bars of chocolate.

Jana is not so much into chocolate, but rather wine gums (might be because of the name wine in it 😀 ) And she would love to eat potatoes everyday. OK, potatoes themselves are not the bad guys here, but who eats them as they are? Usually one makes puree or roast potatoes or fries or at least adds a sauce and these are the bad things.

Do you have any tipps how to loose some weight or maybe even questions? Don’t hesitate, just write a comment and let us know.

What you need for the lentil salad:

  • 300g lentils
  • 2 spring onions
  • 1 clove of garlic
  • 1 pomegranate
  • 150g honey goat cheese
  • 1 carrot
  • 1-2 tbsp balsamic vinegar
  • salt

How to prepare the lentil salad:

  1. Cook the lentils in salted water until al dente. Try not to overcook them, it happens so fast. In the meantime, cut the onions, garlic and carrot in fine pieces and get the seeds out of the pomegranate.
  2. Roast the carrots, onion and garlic in a pan with some oil at medium heat. Add the lentils and mix everything, add balsamic vinegar and salt and put it on a plate. Now you can add the cheese (in little pieces is best, we used cream cheese) and the pomegranate seeds and if you like some honey and balsamic vinegar. That makes it perfect for us 🙂
