It is just about time we have another cake. It’s been a while now (but actually I could eat cakes every day;) ). I don’t love chocolate so I chose a lemoncake with oranges and blueberries. Actually I didn’t appreciate blueberries before I have been to Canada but now I just love them just as maple sirup;). Lemoncakes are good for every occasion. Easy to bake, kind of everyone likes them and they are fresh. We chose a cake with orange because it makes the cake a bit sweeter and blueberries because they look great and taste very good as well, especially combined with lemon. It doesn’t take too much time to prepare the cake but it needs some time in the oven. Actually this is a great opportunity to do sth else. I finished another entry that will be up soon 😛
Well, of course you can replace the orange with another lemon and leave out the blueberries and you probably get one of the best lemoncakes you ever ate 😉

Ingredients
Dough:

- 250g soft butter
- 200g sugar
- 4 eggs
- 300g flour
- 1 tsp baking powder
- 1 Lemon
- 1 orange
- maybe a shot of milk
- ca 150-200g blueberries

Icing:

- 100-150g icing sugar
- juice of 1 lemon

Preparation
- Pre-heat the oven to 180°C (356°F) and prepare a baking tin. Beat butter and sugar until fluffy and add the eggs one after another.
- Add the juice and zest of one orange and one lemon before flour and baking powder. The dough will be quite solid but it doesn't affect the fluffiness of the cake at all. Still, if you think it is to0 solid, add some milk to it. Put about 150g blueberries in and stir again before putting it in the tin.
- Put it in the oven and keep an eye on it. You can test if the cake is done by using a kind of wooden chopstick, if nothing sticks to it after putting it in the cake, it's done:)
- Last but not least mix the icing sugar with the juice of one lemon until the icing got a good consistency. Now decorate the cake and that's it.
