spring curd and cream cheese dip

Do you know these greeks who sell dips and cremes from their trailers? We have such a guy and I gotta say I just love these cremes and dips and chilis and feta and whatever they have. We love it when we have a barbecue or for breakfast or just as a snack with some bread. Genius. Just try not to talk to anyone, because they use as much garlic as possible :D. I am gonna show you 2 of my favorite recipes for dips today and you can talk to people afterwards, thats no problem. There are so many varieties. I often add some red peppers to the cream cheese dip, tomatoes are not really good but you have so many possibilities, I just love that.

As a child I even loves spring curd. Just take some veggies and dip them in the curd. That was enough to make me happy 🙂 Even today I can recommend  that. But these spring curds you can buy are full of additives and things no one should eat. I always think that those things are easily made, why should someone buy this supermarket things with more additives than fresh ingredients? And the best thing about it is that you take those herbs you like. I don’t like coriander at all. So you will never find coriander in my spring curd. But all the other things like chives, thyme, spring onion……

For our wine tasting I made these dips with bread /baguette and it is just great. Its great for breakfast as well so it is very variable.

What you need for the spring curd:

  • 150g quark
  • ca 80g yoghurt
  • ca 1/2 clove of garlic
  • salt
  • pepper
  • juice of half a lemon
  • pinch of sugar
  • herbs of your choice ( I tick chives and parsley this time)

Directions:

Chop garlic and herbs, mix the yoghurt and quark with lemon juice, salt, pepper and sugar and stir it. Add garlic and herbs and stir again. Let it rest in the fridge for some time. The longer it rests, the better the flavors work.

What you need for the cream cheese dip:

  • 200g cream cheese
  • 1 shot of milk
  • 1 tsp tomato paste
  • salt, pepper, sugar
  • 1/2 onion
  • 1/2 clove of garlic
  • 5-6 Jalapenos
  • ca 1/4 Feta

Directions:

Chop onions, garlic and jalapeños into pretty small pieces. Mix cream cheese, tomato paste and milk. Season with salt, pepper and sugar. Mix everything together and put some feta crumbs in it as well. Now stir it and put it in the fridge to rest.
