Today we got a great Panzanella for you guys. It is simply THE perfect side dish for bbqs, if you were lucky enough to see the sun;) It would be best if you went to a market for the tomatoes, they are not just delicious, but actually you get the most variety there and the best quality. the more colorful the better, you know 🙂
I love bread. Especially when it’s roasted and rubbed with garlic. I could literally eat that for lunch or bread with herb butter. Sadly, I am an amateur concerning baking breads, but I am gonna try it again soon I guess.
What you need for Panzanella :
- 300-400g Tomatoes
- 1 Ciabatta
- 2 cloves of garlic
- 1 bunch of basil
- 1/2 onion
- 3 Tbsp olive oil ( it is worth the investment)
- 2 Tbsp Red wine vinegar
- 1 buffalo mozzarella
- 100g Parmesan
- 100g Joghurt
- salt and pepper
How to prepare Panzanella:
It is as easy as it looks good 😀
- Cut a few pieces of the Ciabatta, put some oil on top and put them in the oven at 220°C until they are crispy. Chop the onion and fry it in the pan, just for a moment.
- Now half the tomatoes, place them in a bowl with the onions. Mix yoghurt, 2 small tomatoes, 1 clove garlic, olive oil, salt, pepper, red wine vinegar and parmesan in a bowl and process it.
- Get the bread out of the oven and rub it with the garlic. Cut it and add it to the bowl. Now pluck the basil. Doesn’t have to be fine, add it as well. Now add the dressing and stir it by hand. It is almost done 😉 just add some parmesan and mozzarella as well an that’s it.
Don’t wait too long until you eat it, because the bread gets all mushy again. So if you prepare it for a party or dinner, try to separate the dressing and the bread as long as possible.
