Wholemeal pasta with baked tomatoes

As we said a few entries ago, Wednesday is the day for some carbs in order not to die and to fill up our carb storage until the weekend. Baked tomatoes and wholemeal pasta are perfect for that purpose. Good carbs are in there, tomatoes and some cottage cheese, mal it is very easy and super tasty. Just put the tomatoes in the oven with garlic and olive oil and let them rest there for 20 minutes, get it out, smash it and add the pasta. 25 minutes and you get the perfect pasta.One problem while losing weight is organization at least for us. We didn’t really plan what to eat but just went to the supermarket and bought just what we found. Of course you end up with lasagna and things like that in such a case. Now we try to plan our meals and get inspired by pinterest or installiert or whatever.Ofentomaten-nudelnSometimes that is really frustrating because you always get to see those cauliflower pizzas and zoodles. Or rice made of cauliflower. For God’s sake, when we wanna eat pizza, we wait for the weekend and have some real pizza or pasta or rice. In Germany it is discussed whether a vegan sausage is allowed to be called sausage because it doesn’t have anything to do with meat. But noodles made of zucchini are a thing? Crazy world. At least that is how we feel ( and we tried cauliflower pizza which was disgusting) but if you like it, go ahead. So we prefer to look a little longer to find something we like.

What you need for wholemeal pasta with baked tomatoes:

  • 200g pasta
  • 500g fresh cherry tomatoes
  • 1 bunch of basil
  • 1 tbsp balsamic vinegar
  • 1 tbsp water
  • 1 tbsp olive oil
  • 1 clove of garlic
  • 2 tbsp cottage cheese
  • salt and pepper


How you prepare the wholemeal pasta and bakes tomatoes:

  1. Pre-heat the oven to 200°C and cut the tomatoes in half or if they are really small just leave them as they are. Add chopped garlic, balsamic vinegar, water, olive oil as well as some salt and pepper to the ovenproof dish and put it in the oven for 20 minutes.
  2. Heat up some water in a pot and add some salt. Cook the pasta until it is done. Take the dish out of the oven and smash it a bit. Season with vinegar and salt as well as the basil. Now add the pasta and let it rest a few minutes, serve it and top it with cottage cheese.
